zucchini & summer squash recipes

Zucchini Cakes
2 whole zucchini, finely shredded and liquid squeezed out
1/4 onion
1 cup breadcrumbs
3 or 4 eggs (start with 3, add one more if mixture is too dry)
2 T minced garlic
1/2 tsp paprika
1/2 cup shredded parmesan cheese
salt & pepper to taste
red pepper to taste

Mix everything together. Make patties, squeezing tightly and flatting carefully.
Melt butter or coconut oil in a frying pan. cook patties in pan on medium heat, to ensure outside doesn't burn before inside is cooked.
Enjoy with plain Greek yogurt on side for dipping.
